Limited Stocks. R.D. (’recently disgorged’) was proposed for the first time by Madame Bollinger in 1961 on the basis of the 1952 vintage. This concept is unique, absolutely without equivalent in Champagne. In terms of blending, R.D. is a Grand Annee, but a Grande Annee that has aged in the Bollinger cellars for a longer period: a minimum of eight years and up to 20-25 years. This slow maturation allows for reinforcing the aromatic subtlety and complexity of the wine, developing a highly original style recognised and appreciated by connoisseurs of great wines. R.D. is also a recent disgorging that guarantees unique freshness and vivacity as regards the wine’s venerable age and which allows the aromas to fully express themselves. In order to inform the consumer the disgorging date is printed on the label. By nature, the R.D. boasts a nearly-unlimited capacity for conservation, before of after disgorging. R.D. is an ‘extra-brut’, i.e. the dosage is very low (less than 5 grammes of sugar per litre).

BOLLINGER – La Côte aux Enfants 1999 75cl Bottle
Limited Stocks. Please not that this is not a sparkling wine, it is in fact an example of red wine that could have produced from Champagne a few centuries ago, at the time of their splendour. La Côte aux Enfants comes from a small plot of 70 acres, located in the heart of the terroir of Aÿ one of champagne’s Grands Crus. Exceptional for its exposure and the quality of its soil, it is exclusively planted with Pinot Noir. This vineyard is specifically cultivated, with a green harvest that reduces the yield down to 8,500kgs per hectare. At the harvest, the grapes are sorted ‘à la clayette’ and the harvest completely destemmed. Only made from the ‘jus de goutte’, (Free-run juice), this is the first juice following the running-off of a tank after alcoholic fermentation. It is also called free-run wine. The wine macerates on its skins for 10 to 12 days. It is then aged for a maximum of two years, in 205 litre oak casks, which are three to five years old. Originally, Champagne was reputed for… its red wines. It is also said that it ousted the wines of Burgundy from the table of Henri IV. The most renowned were those of Aÿ and indeed it was usual for all red wines from Champagne to be reffered to as ‘Vin d’Aÿ. The red coteaux champenois (the denomination that describes still wines from Champagne) from Aÿ. ‘La Côte aux Enfants’, therefore constitutes a return to the origins of Champagne. It is only produced in exceptional years from a small plot, ‘la Côte aux Enfants’, ideally located in the heart of the terroir of Aÿ and planted with pinot noir. red wine

BOLLINGER – La Grande Annee 2000 75cl Bottle
Grande Annee, the name, signifies that Bollinger’s vintage champagne is only released during ‘great’ years. The Grande Annee blend comes only from a particularly fine harvest. When such a harvest occurs the House selects its best wines, cru by cru and grape variety by grape variety – the key to the particular year. Each wine is individually fermented in oak casks prior to blending. On average, the blend is composed of 65% pinot noir and 35% chardonnay. The ‘Grande Annee’ always ages for a minimum of five years in its bottle, magnum or jeroboam corked with a traditional cork.

BOLLINGER – La Grande Annee Rose 2002 75cl Bottle
La Grande Année Rosé is a derivation from the blend of La Grande Année and is only produced when exceptional quality vintages occur. The grapes come exclusively from Grands and Premiers Crus. For this 2002 vintage, wine from 16 villages has been included, 77% from Grand Crus and 23% from Premier Crus. Bollinger use only the ‘cuvée’ juice in the making of La Grande Année Rosé. The first fermentation is always carried out 100% in old oak barrels, which has become quite unique in Champagne. The Cru’s are fermented in small oak barrels which enables a rigorous selection. Bollinger uses only old barrels (5 years and more) in order to generate neither an oaky taste nor tannins. This method re-inforces the aromatic complexity and the ageing potential of the wines. At this stage the red wine from ‘La Cote Aux Enfants’ is blended with the Grande Année base wine in a proportion of 7 to 8%, which gives birth to La Grande Année Rosé. Once the wine is bottled the second fermentation and cellar ageing are conducted under natural cork. This method, nowadays very seldom used in Champagne, is a guarantee of freshness. It allows the aromas to preserve all their bouquet. La Grande Année Rosé then ages in the cellars for at least 5 years. After Manual riddling and disgorging, La Grande Année Rosé rests for a minimum of 3 months prior to shipment.
